Borscht - A Hearty Ukrainian Recipe

This heartwarming Ukrainian beet soup is popular comfort food which melts hearts on a colder day. Much needed essential healthy elements occur naturally in this rich meal of a soup. Each family and country cooks borsch a little differently. Here is our authentic family recipe.





1 Cabbage

2-3 large carrots

2-3 cloves of garlic

2 medium onions

3 large beets

4 large potatoes

1 tomato

1/4 cup of ketchup or tomato sauce

lemon juice to taste

Parsley, dill, bayleaf, black pepper, salt,

Make your own, or use pre-made broth beef or vegetarian



Pre-boil beets whole  until almost tender in a separate pot and let them cool off.  You may reserve the water they were boiled in also. In a large pot of (about 2 gallons) simmering broth combine all ingredients in the following order: Reserved beet water, cut potatoes, grated carrots, chopped onions, garlic, grated beets, chopped cabbage, diced tomatoes, tomato sauce, salt, pepper, bay leaf, lemon juice. Add finely minced herbs at the very end. Total cook time 1 hour.  Enjoy with a spoon of sour cream and black bread!
